Diamond Slushy – delicious as a long drink or tasty refreshing dessert – just choose a spoon or straw. (Serves 4)
500ml Diamond White
500ml cranberry juice
100g sugar
1 tablespoon lemon juice, squeezed
Method
Pour the Diamond White, cranberry juice and sugar into a large saucepan, and bring to the boil over a medium heat. Stir the mixture until the sugar dissolves; this should take approximately 3-5 minutes. Remove from the heat and stir in the lemon juice.
Transfer to an appropriately sized container, suitable for freezing. Let the mixture cool and place in the freezer for approximately 2 hours, remove and mash with a fork. Cover, and continue freezing until set, between 2 – 6 hours is recommended.
Mash the frozen mixture to the consistency you desire, or for a smoother texture use a food processor or similar. Ensure the slushy is stored in an airtight container (suitable for freezing) and refreeze until ready to serve.
